The important role played by chiral symmetry and axial anomaly in QCD in nuclear physics is reviewed. Some recent topics on possible chiral restoration in hot and/or dense matter are picked up. We also discuss so called {\em effective} restoration of chiral anomaly hot and/or dense matter, as may be seen in a character change of $\eta '$ meson.

We summarize the status of electromagnetic probes of strongly interacting matter produced in relativistic heavy-ion collisions at CERN-SPS with respect to indications of chiral symmetry restoration. Explorative results for studying the open charm dynamics at BNL-RHIC are presented.

A physical introduction to the basics of chiral dynamics is presented. Emphasis is placed on experimental tests which have generally demonstrated a strong confirmation of the predictions of chiral perturbation theory, a low energy effective field theory of QCD. Special attention is paid to a few cases where discrepancies exist, requiring further work. Some desirable future tests are also recommended.

QCD string picture of highly excited hadrons very naturally explains parity doubling once the chiral symmetry is restored high in the spectrum. In particular, the spin-orbit and tensor interactions of quarks at the ends of the string, related to dynamics of the string, vanish. High in the spectrum there appears higher degree of degeneracy, namely parity doublets with different angular momentum cluster around energy of the string in the given quantum state.

Effective chiral restoration in the hadronic spectrum has been conjectured as an explanation of multiplets of nearly degenerate seen in highly excited hadrons. We compare axial charges of excited nucleons, as predicted by the chiral symmetry restoration picture, with the traditional, moderately successful for the ground-state baryons SU(6) symmetry.
